About this time every year, the soaking begins….
It is Guyanese tradition to start soaking dried fruits for our black cake and pork for our garlic pork; all in preparation for…next Christmas! Sadly, in order to be healthy, we need to tweak family traditions.
I recommend a quicker soaking process – shrinking a year to a couple of days. Instead of pork, why not replace that with a leaner meat such as chicken or turkey? Instead of dried fruit, why not replace that with fresh fruits? The end result will still be delicious.
